CURRENT ASPECTS OF WHEAT STARCH PRODUCTION

The article presents a general description of wheat, information about starch obtained from its grain and its chemical composition. The experimental part presents the results of studying the yield of starch depending on the duration of swelling with different concentrations of sodium hydroxide solution. A schematic diagram of the separation of gluten and starch is shown. The mode of the technological process is given and the main equipment is indicated that ensures parallel production of dry gluten and starch.
